Beet and Caprino

TORRETTA DI BARBABIETOLA E CAPRINO (BEET AND CAPRINO TOWER)

Preparation time: 10 minutes                                                 Servings: 4
Beet and Caprino

INGREDIENTS

2 medium- large roasted beets
280 g (10 oz) goat organic caprino cheese from Casaleroccolo
4 tablespoons pomegranate bursts
Fresh thyme
Extra virgin olive oil
Salt and freshly ground pepper

DIRECTIONS

1. Peel and slice the roasted beets into thin rounds, then dice them into small cubes. Place the cubes in a bowl and season with extra virgin olive oil and salt.
2. In a separate bowl, mix caprino, pepper, and fresh thyme. Stir well and taste to adjust seasoning.
3. Using a food ring mold about 8 cm (about 3 inch), assemble the towers: start with a layer of diced beets, followed by a layer of the caprino mixture, and top with pomegranate seeds.
4. Serve immediately and enjoy this vibrant, festive appetizer. – Paola
