Italian style guacamole is my reinterpretation of guacamole, a staple of Mexican cuisine.
Avocado is a fruit that was not used in the past in our Mediterranean diet and is originally from Mexico, but nowadays it is getting more popular because it is tasty and is beneficial to one’s health and beauty.
Hemingway called it ” food that has no rival among the fruits, the real fruit of paradise.” It is rich in vitamin A and E (which have high antioxidant properties), minerals and good fatty acids, and it provides a lot of energy.
ITALIAN STYLE GUACAMOLE
Preparation time: 10 minutes Servings: 4
INGREDIENTS
150 g (5 oz) baby Roman lettuce leaves, washed, pat dried and cut in large pieces
1 avocado
4 Roman tomatoes, cut into pieces
1 medium red onion, finely sliced
1 hot chili pepper, cleaned and finely sliced
1 handful coriander or parsley
1 green organic lemon, zest
Dressing
3 tablespoons extra virgin olive oil
1 green organic lemon, juice
Sea salt and freshly ground pepper to taste
DIRECTIONS
1. In a small bowl prepare dressing by mixing olive oil, lemon juice, salt and pepper.
2. In a four serving bowls combine lettuce, tomatoes, onion, pepper and coriander.
3. Peel, de-stone and cut avocado into pieces. Add a few drops of lemon juice to stop from going brown.
4. Add avocado to salad and dress immediately. Toss gently, add zest and serve. – Paola
