Gluten-free chocolate mousse cake with raspberries

TORTA MOUSSE AL CIOCCOLATO (CHOCOLATE MOUSSE CAKE)

Total preparation time: 15 minutes              Cooling time: at least 6 hours                             Servings: 6
Cioccolato

INGREDIENTS

4 large or 5 small ripe apples (Golden delicious) cooked and puréed
250 (9 oz) or 300 (11 oz) good quality dark chocolate (at least 72%), melted

DIRECTIONS

1. Mix apple purée (at room temperature) and melted chocolate in a bowl until smooth
2. Pour into a spring baking pan, size 18 cm (7 inch) diameter or 6/8 dessert cups, depending on the size.
3. Refrigerator for minimum 6 hours or better overnight.
4. Optionally, dust with cacao powder and garnish with berries coulis, fresh berries, cherries compotè fruit. I love it with raspberries. – Paola
