This is a salad to serve as a starter at your New’s Year dinner, something light and tasty. I also like it as my main course for a light lunch.
Fish should be on your table at least 2-3 times a week. Salmon is an excellent source of high-quality protein, vitamins and minerals, as well as omega-3 fatty acids, which should receive special attention. Omega-3 fatty acids are beneficial to your brain, heart, joints and general well-being.

INSALATA CON SALMONE AFFUMICATO E MANDORLE (SMOKED SALMON AND ALMONDS SALAD)
Preparation time: 10 minutes Servings: 4
INGREDIENTS
360 g (13 oz) smoked salmon, cut into pieces
240 (9 oz) g baby lettuce, washed and dried
4 tablespoons slivered almonds, toasted
Dressing
1 large organic lemon, juiced
3 tablespoons extra virgin olive oil
Freshly ground black pepper
DIRECTIONS
1. In a small bowl prepare the dressing by mixing olive oil, lemon juice and pepper.
2. Place lettuce on a serving plate, add salmon, and almonds, and drizzle dressing on top. Serve immediately. – Paola
