This recipe is a reinterpretation of the famous American Waldorf salad, more precisely from the city of New York. It is an elegant and nutritious dish.
Chicken contains a relatively low amount of saturated fat and cholesterol. It is definitely preferable to red meat. For a vegetarian version skip chicken.

CHICKEN WALDORF SALAD
450 g (16 oz) chicken breast, grilled and cut into strips
3 white celery stalks, finely sliced
2 red apples, cut into pieces
1 crispy Roman lettuce stalk, washed and dried
10-12 walnut halves, coarsely chopped
200 g (7 oz) black grapes, seedless and cut in half
Extra virgin olive oil
200 g (7 oz) Greek yogurt
1 scarce tablespoon dill, chopped
1 scarce tablespoon lemon juice
Sea salt and freshly ground pepper
1. In a small bowl prepare dressing by mixing yogurt, dill and lemon juice. Add salt and pepper to taste
2. Place celery, apples, walnuts and grapes in a large bowl and mix
3. Arrange salad leaves on four dishes or bowls, place on top fruits and vegetables mix, dressing and garnish with chicken. Drizzle with olive oil. Serve immediately. – Paola
